Blueberry Muffin Cookies with Streusel Topping

👩‍🍳 Instructions

1. Make the Streusel
Combine the flour, brown sugar, cold butter cubes, cinnamon, and salt.
Cut the butter into the dry mixture using a fork or pastry cutter until crumbly with pea-sized pieces.
Chill the mixture while you make the cookie dough.
2. Prepare the Cookie Dough
Cream together the softened butter, brown sugar, and granulated sugar until the mixture becomes fluffy (about 2–3 minutes).
Mix in the egg and vanilla.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually stir the dry ingredients into the butter mixture just until everything is incorporated.
3. Add the Blueberries
Carefully fold in the fresh blueberries, trying not to break them.
4. Shape & Swirl
Drop scoops of dough onto a baking sheet lined with parchment.
Add a small spoonful of blueberry jam to the top of each scoop and gently swirl it with a knife or toothpick.
5. Add the Streusel
Generously sprinkle the chilled streusel over each cookie, pressing lightly so it sticks.
6. Bake
Bake at 375°F (190°C) for 12–15 minutes, until the tops turn slightly golden but the centers remain soft.
7. Cool & Enjoy
Let the cookies cool completely before serving.
