Instructions:
Prep oven:
Preheat to 375°F (190°C). Line a baking sheet with parchment.
Mix sausage & cream cheese:
In a large bowl, combine the raw sausage and softened cream cheese until smooth.
Add Rotel:
Stir in the drained Rotel. (If not well drained, the mixture will be too wet.)
Add dry ingredients:
Add Bisquick and cheddar.
Mix until everything sticks together and forms a thick dough-like mixture.
Shape:
Roll into balls about 1 to 1½ inches wide.
Bake:
Place on the baking sheet and bake 18–22 minutes, or until golden and cooked through.
Serve warm:
Great with ranch, spicy mayo, or jalapeño dip.
Tips:
For more spice → use hot sausage + Rotel with green chiles.
For firmer balls → refrigerate dough 20 minutes before rolling.
For extra flavor → add ¼ cup finely diced green onion.
