Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon all-purpose flour
- 1 cup beef or chicken broth
- 3 cup shredded Gruyere cheese (or Swiss cheese)
- 1/2 cup shredded Parmesan cheese
- Salt and pepper, to taste
- Fresh thyme leaves (optional, for garnish
Instructions:
- Preheat Oven: Preheat your oven to 370°F (180°C).
- Prepare Chicken: Season the chicken breasts with salt and pepper on both sides.
- Sear Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken breasts for about 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
- Cook Onions: In the same skillet, add more olive oil if needed. Add the sliced onions and cook over medium-low heat, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes. Add minced garlic during the last couple of minutes of cooking the onions.
