Garlic-Herb Chicken Thighs & Roasted Potatoes

1️⃣ Prep & Preheat
Preheat oven to 425°F (220°C).

2️⃣ Season & Sear Chicken
Pat chicken dry, then rub with 1 tbsp olive oil, salt, and pepper.

Heat 1 tbsp olive oil in an oven-safe skillet over medium-high.

Sear chicken skin-side down 5-6 mins until golden. Flip and sear 2 mins. Transfer to a plate.

Toss potatoes with 1 tbsp olive oil, salt, and pepper in the same skillet.

Roast 15 mins until starting to soften.

4️⃣ Combine & Bake
Nestle chicken among potatoes.

Whisk melted butter, garlic, herbs, and paprika, then drizzle over chicken.

Bake 20-25 mins until chicken hits 165°F (74°C) and potatoes are tender.

5️⃣ Broil & Serve
Broil 2-3 mins for extra crispy skin (optional).

Pro Tips
Extra crispy skin? Pat chicken very dry before searing.
Brighten it up: Add 1 tsp lemon zest to the butter sauce.
No fresh herbs? Use 2 tsp Italian seasoning instead.
