500 grams medium-fat ground beef
1 onion, grated

1 teaspoon salt

1/2 cup flour

8 cups water

1 egg yolk
Juice of 1 lemon
3 tablespoons yogurt
Instructions:
In a bowl, combine the ground beef, grated onion, rice, salt, black pepper, and paprika. Mix well and form marble-sized meatballs from the mixture.
Roll the meatballs in flour to coat them evenly.
Heat sunflower oil in a pot over medium heat. Add the diced carrots, potatoes, and thinly sliced garlic. Fry until lightly browned.
Stir in the tomato paste and cook for an additional 2-3 minutes.
Pour in the water and bring to a boil. Add thyme, black pepper, and salt. Mix well.
Gently drop the meatballs into the boiling soup one by one. Cover the pot and let it simmer over low heat.
Meanwhile, prepare the sour cream mixture by whisking together the egg yolk, lemon juice, and yogurt in a bowl.
After the meatballs have cooked and swelled, check the consistency of the vegetables. If they are cooked, take a ladle of soup and mix it into the sour cream mixture to temper it.
Slowly add the tempered sour cream mixture to the pot, stirring constantly.
Let the soup simmer for an additional 10 minutes over low heat.
Serve hot and enjoy! You can garnish the soup with chopped parsley before serving, if desired.
