Moist Chocolate Loaf Cake
Ingredients:
1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 cup sugar
1 tsp baking soda
½ tsp salt
2 eggs
½ cup milk (or buttermilk for extra moisture)
½ cup vegetable oil
1 tsp vanilla extract
½ cup hot coffee (or hot water)
Instructions:
Preheat oven to 350°F (175°C). Grease and line a loaf pan.
Mix dry ingredients
In a bowl, whisk flour, cocoa powder, sugar, baking soda, and salt.
Add wet ingredients
Mix in eggs, milk, oil, and vanilla until smooth.
Add hot coffee
Slowly stir in hot coffee (batter will be thin—this is key for moisture).
Bake
Pour into pan and bake 50–60 minutes, or until a toothpick comes out clean.
Cool
Let cool in pan 10 minutes, then transfer to a rack.
